Butchered and cooked in house, in our Rational oven (the same as you will find in almost every Michelin starred Restaurants in the world).
Slow roasted, in our amazing oven, then the heat is cranked up towards the end of cooking to crisp the skin. Serve well salted with some apple sauce or apple chutney
