At Elite Meat, we offer butchery/cookery classes to help improve all aspects of your culinary skills. As one of Britain’s best butchers, we try to encourage as many people as possible to take on our classes, to learn the best cut and the best cooking technique for the whole animal. These elements ensure you get the best value, flavour, succulence & enjoyment out of our fabulous meat.
The intensive cookery classes address how to best select and cook the vast range of meat and poultry available in today’s market. You will learn about different cuts of meat and how to cook them correctly. All red meat used in our cookery classes is locally reared & ethically farmed near Harrogate.
During butchery/cookery classes held in our cookery school near Harrogate, Gordon will teach you simple butchery skills, a range of cooking methods to get the best results from locally- sourced, ethically-farmed meat and how to waste nowt. You will also learn how to sharpen and use a knife, like a butcher, safely and effectively. We do have chain mail gloves available so you shouldn’t cut yourself.
Cooking classes are designed for everyone who want to pick up new skills and learn more about what they eat, best cut, best cooking method etc. We also talk about where the animals came from & why all meat is not the same.
Then we sit down & eat what we have prepared & answer any questions.

I recently attended the ‘Beef’ night and it was beefy to say the least! Casserole slow cooked, sirloin steak, beef cheek and the almighty Tomahawk!!!

Just few words to say a big thank you for last night’s Lamb Butchery/Cookery Master class. I found it most interesting and helpful. Not only learning some new techniques but also new recipes!! They were delicious.

For a really enjoyable, informative evening, I can’t recommend anything more strongly than Elite Meat’s Beef butchery/cookery masterclass. I was slightly unnerved by the word masterclass, but in fact Gordon Atkinson’s teaching made even quite complex procedures accessible and fascinating. Watching him butcher an entire side of beef at lightening speed was a delight. We learnt an enormous amount about ethical sourcing, knife sharpening, and safe handling of meat. However, the undoubted high point of the evening was cooking and tasting. I came a away with not only a better understanding of beef, but the feeling of an evening very well spent!”
Had a brilliant evening on Wednesday making Burgers & Sausage which were delicious on the evening but even better for dinner on Thursday Gordon is extremely knowledgeable & really willing to teach & pass on his experience. Apart from the sausage & burgers to take home in a great cool bag we all took home some bacon we are “dry curing”, hopefully it will be as good as Gordon’s was on the night. Looking forward to booking for another course later in the year.
