The pork used when we butcher & prepare our bacon is RSPCA Freedom Foods pork, farmed near Easingwold. Colin & his family have supplied our pork for the last 20+ years. Colinโs 2 sons now work in the business ensuring our supply chain for the next generation.
Our belly pork is skinned, trimmed & rubbed with a Bavarian rock salt (nitrate free) then turned daily for 7 days. We then dry for a further 7 days before putting on sale.
Lay your streaky in a frying pan, no oil needed, cook on a medium heat until your desired crispness is achieved. This will not take as long as mass produced bacon as there is no added water to boil away. Enjoy as a Full English, or on top of poached eggs with red or brown sauce, or use to wrap around lean meats.
